Since you're pressing F5 to configure the array controller, we are assuming you have a DL380e Gen8 system. The "e" series uses the b320i smart array controller. Pressing F5 should launch you into the ACU utility contained within Intelligent Provisioning.
During POST pressing F10 and starting Intelligent Provisioning won't wipe out anything you've already configured unless you select the option to do so. I'd suggest launching ACU from within Intelligent Provisioning.
G7 and Gen8 systems do take a few minutes to boot. The more memory the system hast he longer it takes as there are some checks done during POST.
I can't say I've seen your issue before, but you might try checking for an update to Intelligent Provisioning
